The letter system is designed to help consumers choose restaurants and prompt owners to keep eateries clean. The grades are based on food safety practices and are
posted in restaurant windows. Spark’s got its second “A” rating in a year. Mayor Bloomberg says more restaurants are now getting A’s on the first inspection. More than $3 million in fines were waived in the last six months after restaurants cleaned up their facilities before their second inspection.
